Potato and Tomato Curry. Potato curry is a one pot dish made by simmering potatoes in onion tomato masala along with spices & herbs. You can pretty much use what ever you have in hand and yet make this dish delicious. Potato is a versatile veggie and just goes so well in any dish.

Ingredients of Potato and Tomato Curry
- You need 2 of Potatoes (Peel & cut into small cubes).
- It's 2 of Tomatoes (Blend in a Blender).
- Prepare of As required Salt.
- It's 1/2 tsp of Mustard Seeds.
- It's 1/2 tsp of Cumin Seeds.
- It's 1 pinch of Asafoetida.
- You need 2 of Long Green Chillies.
- Prepare 1 Sprig of Curry Leaves.
- You need 1 tsp of Kitchen King Masala.
- Prepare 1/2 tsp of Kashmiri Paprika Powder.
- You need 1 tsp of Coriander Powder.
- It's 1/2 tsp of Cumin Powder.
- It's 1/4 tsp of Turmeric Powder.
- It's 1 of Green Bell Pepper (cut into small cubes).
- Prepare 1 tbsp of Coriander Leaves (For Garnish).
- You need 1 tsp of Lemon Juice.
- Prepare of As required Hot Water.
- Prepare 3 tbsp of Til Oil / sesame oil.

Potato and Tomato Curry instructions
- Blend the tomatoes in a blender and set aside. In a pan, heat til oil. Add green bell pepper cubes and stir fry for 2 minutes on medium high heat. Remove and keep aside..
- In the same pan, add more til oil. Add mustard seeds, cumin seeds and asafoetida. Allow the seeds to splutter..
- Add green chillies and curry leaves and saute for a minute..
- Add turmeric powder, cumin powder, kitchen king masala, chilli powder and coriander powder and saute for a minute..
- To this add potatoes and hot water and let it come to a boil. Cover with lid and cook till potatoes are cooked. (Alternatively, you can cook it in a pressure cooker).
- Add the stir fried green bell peppers, coriander leaves and lemon juice and saute for a minute..
- Garnish again with coriander leaves and green chillies.
- Relish it either with Rotis, Puris, Rice etc.
